Adjacent to the Mexican border, Huehuetenango is a region characterised by the Sierra de los Cuchumatanes mountains and significant altitude variations. Coffee is grown on slopes between 1,350 and 1,750 meters, where lower temperatures slow the development of the cherries and contribute to greater bean density.
This coffee is produced by small farmers and combines three traditional Guatemalan varieties: Caturra, Catuai, and Bourbon. Ripe cherries are hand-picked, fermented for 36 hours, then washed before being sun-dried. The washed process contributes to a clean and well-defined cup, allowing the coffee's sweet and chocolatey character to shine through.
Small-scale production plays a central role in the Huehuetenango region. Over recent years, various projects have worked with local producers on more resilient agricultural practices, including soil conservation, water management, crop diversification, and adaptation to climate change. The region is also renowned for its high-altitude coffee production and the importance of the farming communities that keep these mountainous areas productive.
In the cup, it presents a balanced acidity, medium body, and a profile dominated by dark chocolate and toffee, accompanied by a note of black cherry. A light-medium roast that works well both as espresso and in a smooth filter brew.
