Coming from the Yirgacheffe region, one of Ethiopia's most iconic origins, this coffee grows between 1,600 and 2,200 meters of altitude. The lower temperatures and slow maturation of the cherries allow for the development of a delicate, complex, and very aromatic profile, characteristic of great Ethiopian coffees.
After selective harvesting, the cherries are processed using the washed method, enhancing the clarity of the cup and the elegance of the Heirloom varieties. Decaffeination is done using the CO₂ method, a process that removes caffeine while preserving much of the aromas and the identity of the coffee, without resorting to chemical solvents.
In the cup, this Yirgacheffe reveals an elegant and very "tea-like" profile, with prominent notes of bergamot, Earl Grey, and a blackcurrant finish. The acidity is lively and well-integrated, while the medium-light roast respects all the delicacy and complexity of this coffee, providing a clean, medium-bodied, surprising cup, both in filter and espresso.
Why did we choose CO₂ decaffeination?
The CO₂ method is widely recognized as one of the most effective processes for preserving the identity of a specialty coffee. Using supercritical carbon dioxide, caffeine is selectively removed, retaining most of the compounds responsible for the coffee's aroma and flavor. The result is a cup truer to its origin, with greater clarity, complexity, and balance, without resorting to chemical solvents and without compromising the unique character of this Yirgacheffe.
